Mexican Lasagna

Black Beans and Rice

   Black Beans and Rice
Introduction:

A delicious, affordable meal that is cholesterol free and made with very little added fat.

Serve this dish with brown rice and all your favorite taco trimmings.


Ingredients:



  • 1 can (14.5 oz) black beans


  • 1 medium green pepper, coarsely chopped


  • 1-1/2 cups chopped onion


  • 1 tablespoon olive oil


  • 2 bay leaves


  • 1 clove garlic, minced


  • 1/2 teaspoon salt


  • 1 tablespoon vinegar (or lemon juice)


  • 2 c rice, cooked in unsalted water


  • 1 jar (4 oz.) sliced pimentos or roasted peppers, drained


  • 1 lemon cut into wedges



1. Drain and rinse beans.

2. Heat oil in a large pot, then green pepper, onion, bay leaves, garlic, and salt. Saute for five minutes.


3. Add beans, reduce heat and simmer, covered, for 10 minutes.

4. Remove bay leaves and stir in vinegar or lemon juice when ready to serve.



5. Serve over rice. Garnish with sliced pimento and lemon wedges.



Yield: 4 Servings
