Only pasteurized caviar is considered safe. Pregnant women who consume unpasteurized caviar increase their risk of contracting the food borne illness listeria. If you don't know for certain that the caviar you're about to eat is pasteurized, then you should avoid it. Likewise, do not eat caviar from a package that you are unable to read or that fails to mention anything about pasteurization or the source of the product.
