Summer Sausage, Ok to eat?

Thank you thank you Becky. Well now I have to throw what I bought 2 weeks ago away because I have not eaten anymore of it since we were all unsure. But o well I would rather be safe then sorry.

I finely found you. Regarding the summer sausage. Some summer sausage is purchased in the deli section and needs to be refrigerated always. On the other hand some hard salami/summer sausage is sold NOT refrigerated, rather at room temperature, in cassings. Once opened they need to be eaten or leftovers refrigerated.

My professional guess is this...Listeriosis is a cold loving germ that can multiply in the refrigerator, especially on soft cheeses and deli meats. Hard salami (NOT summer sausage, usually refrigerated), does NOT fit into this category and therefore I think it should be safe...eaten within 2-3 hours of opening. However leftoves are then refrigerated, may have become contaiminated, germs could multiply...do not eat unless heated first.

It is high in salt, so use in moderation. Also purchase from reputable dealers, handmade may not have the same safety standards.

Yes please let us know soon. I have already eaten some just because I can not seem to stay away from it. I just don't want to do anything to hurt myself or the baby. I have been craving, for some odd reason, a bologna sandwich and I have been good about not eating that but to have me stay away from summer sausage oh it is going to be tough.

I have asked Becky what her thoughts are on this. My guess is we should probably stay away from the summer sausage because it is high in nitrates. I like you know as soon as I hear back from Becky.

Hi Dottie,

I know I just love it. My neighbor/friend and I went to the farmers market yesterday and we both bought a roll, the make it fresh locally. It is sooooo good and after of course I ate some for a snack this morning I thought about the whole sandwich meat thing.

I hope we get an answer too, which I am sure we will.

Hmmm...good question! It is almost that time of year, and I'm a big summer sausage fan too Jenn! I work in a medical office and we get tons of gift baskets packed with the stuff!!(I just have to buy some pasteurized brie to go with it this year!!)

Maybe Becky the nutritionist would know - hopefully she'll give us an answer!
